Protein Packed Mac&Cheese

If you love mac and cheese but also love hitting your protein goals, Ive got the recipe for you! This version offers a little more balance without sacrificing the creamy + cheesy goodness. Thanks to cottage cheese and protein pasta, it delivers a serious protein boost for those looking to hit their macros!

This recipe uses a few simple ingredients and comes together quickly. Perfect for busy weeknight dinners, or meal prep!

Ingredients

  • 16 oz box of protein pasta, cooked
  • 1 cup full fat cottage cheese
  • 1 cup sharp cheddar cheese, shredded ( about 115g)
  • 1/3 cup milk
  • 1 tablespoon dijon mustard (about 15g)
  • salt, pepper, garlic powder & paprika to taste

Cooking instructions

  1. Cook your pasta according to package directions. Drain and set aside.
  2. Blend cottage cheese and milk until smooth and creamy.
  3. Pour the blended mixture into a saucepan over medium heat. Add shredded cheese and stir until cheese is melted and you have a smooth sauce. Add salt, pepper, garlic powder, and paprika to taste and stir until well combined.
  4. Combine the cooked pasta and sauce. Stir until pasta is well coated with sauce.
  5. Serve immediately and enjoy!

Notes

  1. I like to use good culture cottage cheese and a higher protein milk like fairlife.
  2. Careful not to over salt.
  3. Try topping it with grilled chicken or buffalo chicken, or adding a side of steamed broccoli.
